happy friday, ladies! it’s the last weekend in August. September is rolling in hot y’all. before we switch gears to all things,fall, i’m serving a favorite summer cocktail today – the mighty margarita. what’s on the menu? a tasty dish from Bon Appétit peperoncini chicken. honestly, it’s an easy recipe to follow with little prep time, and it’s a one-pan dish to boot, so clean-up is minimal.
i wanted to take a moment to thank each of you who wished me a happy birthday yesterday. i am always amazed and touched by the thoughtful community at Style at a Certain Age. the other day on Instagram, i mentioned that in 2021 the over 50 women aren’t invisible. y’all prove that every day! we’re alive and well and haven’t turned to dust as some may have imagined. we’re making life count not only for ourselves but our families and communities. let’s keep on keeping on, and we’ll look pretty dang good while we do. i’m sending all my love back in full measure. xo

1 oz Cointreau
2 oz blanco tequila
3/4 oz lime juice
2 slices jalapeño
2 pieces of fresh cilantro
Jalapeño slices to garnish
Combine all ingredients in a shaker.
Add ice.
Shake until well-chilled.
Strain into a glass.
Garnish with jalapeño slices and lime.
Recipe from Bon Appétit
2 lb. skin-on, bone-in chicken thighs (6–8)
¾ tsp kosher salt, divided
¾ tsp freshly ground pepper, divided
3 tbsp.extra-virgin olive oil, divided
1 lb. fingerling potatoes, halved lengthwise
10 peperoncini, plus ½ cup brine
2 garlic cloves, finely grated
1 tsp. dried oregano
½ medium red onion, thinly sliced
3 celery stalks, thinly sliced (about 1 cup), plus celery leaves for serving (i omitted celery)
2 Tbsp. chopped parsley
Preheat oven to 425°. Sprinkle chicken thighs all over with ½ tsp kosher salt and ½ tsp pepper. Coat a large cast-iron skillet with 1 tbsp oil. Arrange chicken thighs, skin side down, in pan and place over medium heat. Cook, undisturbed, until skin underneath is browned, 14–16 minutes.
Meanwhile, toss potatoes, peperoncini, garlic, oregano, remaining 2 tbsp oil, ¼ tsp kosher salt, and ¼ tsp. pepper in a large bowl. Set aside.
Turn chicken over. Add potato mixture to pan, arranging snugly around thighs. Pour peperoncini brine around edges of pan and give pan a shake to evenly distribute. Transfer skillet to oven and roast until chicken is cooked through and potatoes are tender, 40–45 minutes.
Remove skillet from oven and transfer chicken and peperoncini to a plate. Place skillet over high heat and cook potatoes, stirring often, until coated in drippings and glossy, about 4 minutes. Remove from heat and stir in red onion, sliced celery, and parsley.
Place chicken and peperoncini on top of vegetables and scatter some celery leaves over.

What a pretty summer color combo and a great blue on you! My MIL got me a cashmere sweater in a very similar shade last Christmas and I’m very much looking forward to wearing it.
I have a request/idea for a blog post – how to pick out your accessories. During Covid, we were spending a lot of time at our cabin so I’d hidden my jewellery box away and just kept out a few basics. Now I’m about to go back to the office and I seem to have forgotten how to accessorize! I look at my beautiful jewellery every morning and am not quite sure what to pull out. I’m defaulting to a pair of silver studs, or a set of pearl drops most days. Classics, but it’s fun to mix it up too.
