From sheet pan fajitas to lemon pepper chicken, I've rounded up some of my favorite easy and healthy recipes that can serve a crowd or make great leftovers.

Today’s Sunday Supper is so colorful, quick, easy and delicious that it might just be my new favorite sheet pan recipe! Tender chicken thighs, peppers and onions are sliced and marinated in a homemade spice blend with olive oil and lime juice. Then the whole thing is cooked on one pan for only about 25 minutes. Served with warm flour tortillas, fresh jalapeños, limes and cilantro. Let’s get right to it!
It all comes together on a sheet tray and is ready in about 40 minutes. There are few recipes simpler than a sheet pan dinner. This one is made even simpler with cute, tiny little potatoes that require no slicing. With fennel, cherry tomatoes, olives, feta and fresh herbs, this Sunday Supper is colorful and delicious. I absolutely love this dish! It’s like beef and broccoli but, dare I say…better. Tender, juicy meatballs, seasoned with chili garlic sauce and glazed with hoisin and toasted sesame seeds. The oven-roasted broccoli florets are slightly crisp and seasoned with sesame oil and salt. The whole dish is a perfect match of flavor and texture – simply roasted all together on the same sheet pan for a simple, quick Sunday Supper. Let’s do it – Sheet Pan Sesame Glazed Meatballs!
It’s hard to beat roast chicken and sheet pan roasted chicken simplifies the whole meal-making process. I used bone-in, skin-on thighs. You can use boneless, skinless thighs. Or use breasts if you like, just note the cook times will be different – more like 15-20 minutes, rather than 30-35 minutes.
Today I have a super flavorful preparation for bone-in pork chops with fresh, colorful veggies. As far as sheet pan dinners go, this is one of my favorites so far. The pork chops are marinated with a cumin-based dry rub that imparts such a rich flavor. In order to let the pork chops shine, we are seasoning the veggies simply, with salt, pepper and thyme; they keep their fresh flavors and slightly crisp texture to make this dish really interesting and satisfying. Today’s Sunday Supper is an easy, sheet pan dinner that is so simple, yet so flavorful. Aside from the pre-made packages of Indian food from Trader Joe’s, (which are super-good, by the way), I haven’t really had much Indian food since we left California. Well, that had to change, so I am starting with one of Alex’s favorite Indian dishes; today we are making Sheet Pan Tandoori Chicken.
