Preheat the oven to 450 degrees F.
Zest the lemon into a large bowl. Add 1 tablespoon lemon juice (reserve the lemon’s remaining juice for the shrimp and serving), oil, garlic, salt, pepper, and oregano. Whisk to combine.
Add the artichokes, asparagus, tomatoes, and onion. Toss by hand to coat.
Transfer the mixture to a large rimmed baking sheet and spread it into an even layer. Place in the oven and bake until the tomatoes begin to soften and release their juices, about 12 minutes.
While the vegetables are cooking, in the same bowl you used for the vegetables, stir together 1 tablespoon lemon juice, oil, oregano, red pepper, garlic, and salt. Add the shrimp and toss to coat.
Remove the baking sheet from the oven and add the shrimp. With a large spatula, stir to combine the shrimp and vegetables together. Spread back into an even layer.
Return to the oven and continue baking until the shrimp are pink, opaque, and cooked through, 6 to 10 minutes more, depending upon the size of your shrimp. Do not overcook! As soon as the shrimp look opaque and pink, they are cooked.
Remove the pan from the oven. Sprinkle with the feta and parsley, add the olives and squeeze the remaining 1 to 2 tablespoons lemon juice over the top. Season with a pinch of additional salt and black pepper to taste. Serve warm. This dish pairs nicely with rice or baguette slices.

Hi Beth, why not wear shorts at 63 I say go for it. Monday and Tuesday this week we had a heatwave we reached 110f at one point, most English homes don’t have air con so we had to keep all the curtains and blinds drawn to help keep the heat out, I’ve never known temps that high in my 62 years.
You know I love a Negroni considering I don’t like Campari, sweet vermouth but I do like gin and all three together for me work. Wishing you Oscar and Ollie a lovely weekend xx

Your comment made me laugh! My mother also wore shorts until the day she died at 81. She didn’t always think she looked great in them anymore but was a big believer in comfort. She didn’t have center air in her home. As for me, at 61 I prefer shirts over shorts, we absolutely wear shorts during my morning walks here in steamy Alabama. You look great! And I cannot wait to try that shrimp recipe as I’m beginning a low carb diet. Again! Looks yummy!

That outfit looks fresh and cool. I like the tailored look of the shorts. It’s so hot this Summer – here in NJ and everywhere. I’m 68 and wear shorts when weather dictates. I think every woman, regardless of age or figure type, can wear shorts and look appropriate and nice. If the fabric has some body or crispness and they fit well, it works. I don’t expect my legs to look like I’m 30 or 40. They look fine for my age. No one stares ar one body part anyway – if the outfit is nice, you look nice!
