today, i’m dishing up a quick and easy brunch dish. avocado toast can be made in countless ways with your favorite toppings. but don’t think avocado toast is just for brunch. it’s perfect for breakfast, lunch, or dinner. once you get the hang of making it, i know it will be on repeat. all you really need are two ingredients: toast and avocado.
happy friday, gang! we’re inching our way towards Halloween. it’s T minus 9. the weather has been absolutely gorgeous in Georgia the past week, so i’ve been spending oodles of time in the backyard. Oscar too! this is the time of year i love to entertain on the screen porch or the patio.

fridays are for kicking back but with style. it’s safe to say loungewear is here to stay. but that doesn’t mean we have to lounge around in dingy sweatshirts and ratty sweatpants. these days it’s common to elevate your joggers and sweatshirt with platform sneakers and a blazer. it’s the perfect friday outfit whether you’re staying in or headed out for pizza at your neighborhood restaurant. y’all know i’m on a Banana Republic kick this year. this sweater hoodie was calling my name, so i couldn’t resist adding it to my closet. it goes perfectly with a pair of joggers from J.Crew purchased last spring, although BR has a matching sweater jogger. platform sneakers from Vince have been on style repeat for over a year, and a plaid blazer from Talbots adds spit and polish to a casual ootd.
when i entertain, i love to keep things easy breezy. setting up a coffee bar and a bloody mary/mimosa bar for brunch lets my guests serve themselves freeing me to tend to the main course and spend time with them. a beverage tub (similar here) filled with ice keeps the orange juice, Prosecco, and bloody mary mix cold and ready to serve. garnishes for the drinks are prepped ahead of time and placed in ramekins. the old-fashioned glasses passed down from my mother are rimmed with Old Bay Seasoning.
Quick and Easy Brunch Dish
avocados are a versatile fruit to slice, mash, or fill. a source of vitamin C, E, K, and B6, they also provide omega3 fatty acids, and they’re loaded with fat. the good kind that keeps you full between meals. avocado toast has been popular for years with no signs of slowing.
this simple avocado toast recipe makes a quick and easy brunch dish more exciting. once you learn the basics for preparing the base, then you’ve mastered the recipe. toasting the bread is the easy part. start with a basic combination of avocado toast, then get adventurous. avocado toast goes with anything and everything, even a classic bacon and egg combination. i chose two recipes to get you started.
first up is an easy, classic flavor combination of mashed avocado, drizzled with extra-virgin olive oil. fresh grape tomatoes and/or chopped parsley is sprinkled on top. add some red pepper flakes for a spicy kick. this is a great everyday option for breakfast, lunch, or dinner.
want a spin on bagel and lox? the toast gets slathered with tangy cream cheese, mashed avocado, and then topped with all of the traditional ingredients. If you have it on hand, red onion, smoked salmon, capers, and even dill, take this east coast staple to the next level. didn’t i tell you this was a quick and easy brunch dish?
In a toaster, heat the bread slices until golden brown.
Simple Avocado Toast
Scoop out both sides of the avocado flesh into a small bowl. Add lemon juice, salt, and pepper. Lightly mash the avocado with a fork, leaving some chunks. Divide the mixture onto the toasted bread. Drizzle some olive oil on top, season with salt, pepper, and garnish with cherry tomatoes and parsley.
Smoked Salmon Avocado Toast
Scoop out both sides of the avocado flesh into a small bowl. Add ¼ teaspoon lime juice, salt, and pepper. Lightly mash the avocado with a fork, leaving some chunks. Spread the cream cheese over the toasted bread slices. Evenly spread the avocado mixture onto the toast. Add pieces of smoked salmon, red onions, and capers. Season with black pepper.
