the skies opened up last night as severe thunderstorms rolled into town. oscar and ollie hunkered down on our bed for a good portion of the night. thank goodness for king size beds! even i had visions of trees crashing to the ground (or through our roof) what with all the shake, rattle, and rolling going on outside our window. more rain is predicted today which means oscar’s deer patrol has been relegated indoors until further notice. not to worry as his attention shifts to bugging ollie.
since the rain decided to stay awhile, a barbeque was out of the question. instead of shrimp kabobs, i whipped up a healthy black bean quinoa bowl. mr. style loved it! slicing and dicing a few veggies is all that’s needed for prep time. plus, a twenty minute bake time for the sweet potatoes. add an extra five minutes for the yummy cilantro dressing and this meal is in the bag. or bowl.
i’ve shared this vegetable peeler before but this is quite a handy kitchen gadget. the sweet potatoes were skinned in no time. be careful as it is sharp.
what cocktail goes best with a Tex Mex meal? margaritas are always a safe bet. but i rustled up a refreshing raspberry vodka mojito recipe instead. it’s delicious, especially on those hot muggy nights the south loves to deliver. what’s not to love about fresh mint from my garden?
today’s ootd is all about color. after two weeks spent in black and white, i knew a pop of color would be in order once i returned stateside. this classic popover from J.Crew is the perfect answer. the cotton fabric is from Liberty Art Fabrics (a British print house known for its florals since 1875). white pixie pants from Old Navy have a flattering fit (the fabric is a perfect weight yet substantial), Boden yellow suede sandals, and a chic choker necklace from Roztayger complete my friday night outfit.
