Description
Makes 2 Cocktails. Do Ahead: Vodka can be infused 1 month ahead. Transfer to an airtight container and chill. *Raw egg is not recommended for the elderly, pregnant individuals, people with weakened immune systems…or people who just don’t like raw egg.
Ingredients
5 oz. Vodka
2 Earl Grey tea bags
1 oz. Dry Vermouth
2 Large Egg Whites*
2 Strips Lemon Zest
2 tsp. Honey
Instructions
Place vodka and 2 Earl Grey tea bags in a small bowl, making sure tea bags are submerged. Cover and let sit at room temperature 5 minutes (vodka should turn a smoky quartz hue and smell fragrant). Uncover, remove tea bags, and squeeze over the bowl to release all of the vodka; discard.
To make cocktails, combine infused vodka, vermouth, large egg whites, lemon zest strips, and honey in a cocktail shaker. Stir until honey is dissolved, then fill halfway with ice.
Cover and shake vigorously until the outside of the shaker is very frosty, 30–45 seconds.
Strain into a chilled coupe glass.
