Happy Friday, ladies! Yep, another week has come and gone, and it’s time to kick off the weekend once more. If you love gathering around the television and watching football all day, we have the perfect recipe for you—white Chicken Chili that not only feeds a crowd but is delicious. I used to make a variation of this recipe in our Texas days, and I love it as much today as I did thirty years ago. Today’s ootd starts with a simple style formula, Sweater + Denim. It’s a match made in heaven, and it's one I have reached for time and again. Lands’ End is crushing it this fall, so I’m in head-to-toe Lands’ End, including the suede loafers. The Johnny Collar Cashmere Sweater is available in four solid colors and two stripes. I chose the Cobalt Blue and Heather combo that pairs beautifully with light-rinse boyfriend jeans. But the star of this outfit is the lug sole suede loafers that are as cute as they are comfy!

Today, I am wearing classic corduroy pants, the Essential Straight Corduroy Pants from J.Crew Factory come in several colors and are available in petite sizes. Such a great alternative to jeans, corduroy is comfortable and warm on chilly days. I have had this pair for years and they hold up really well.

The Salmoncito is like a cross between a gin and tonic and a Paloma - the tequila and grapefruit soda cocktail from Mexico. The Campari and grapefruit juice give this gin and tonic-based cocktail a citrus flavor and gorgeous red color. It's a light and refreshing cocktail, perfect for a football weekend!
Makes 1 Cocktail
1 1/2 oz. gin
1/3 oz. Campari
1/3 oz. grapefruit juice
4 to 5 oz. tonic water
Garnish: supremed grapefruit wedge, grapefruit peel (discarded)
Combine the first three ingredients in a highball glass filled with ice.
Top with tonic water. Garnish with a supremed grapefruit wedge; express oil from the grapefruit peel and discard it.
A simmering pot of chili is SO fall! And it's a great dish for a weekend of football. A one-pot dish, chili is a great fall comfort food and this white chicken chili is an easy alternative to the usual red-sauce-based chili. Seasoning
2 tsp. oregano
2 tsp. onion powder
3 tsp. cumin
1 tsp. garlic powder
1 tsp. red chili powder
1 tsp. green chili powder
1 tsp. salt
1/2 tsp. pepper
1/4 to 1/2 teaspoon cayenne pepper (adjust to your liking)
1 tsp. sugar or sugar substitute (use a sweetener with a 1:1 equivalent to sugar)
2 tsp. cornstarch
White Chicken Chili
1 tbsp. Olive oil
1/2 large sweet onion, chopped
2 garlic cloves, finely chopped
2 cups shredded Rotisserie Chicken
1 14 1/2 -oz. Can chicken broth
1 4-oz. Can chopped green chiles
2 15-oz. Cans of white beans, like navy beans, drained and rinsed, divided
Toppings: sour cream, shredded Jack cheese, fresh cilantro, sliced avocado
Stir the seasonings together in a small bowl and set aside.
Heat olive oil in a Dutch oven over medium-high heat. Add onion and garlic, cook stirring often until onion is tender.
Stir in the chicken, broth, seasoning, chiles, and one can of beans.
Coarsely mash the remaining beans and add to the chicken mixture.
Bring to a boil, reduce heat to low and simmer, stirring occasionally until mixture thickens slightly and the flavors come together, about 10 minutes.
Top with sour cream, shredded Jack cheese, fresh cilantro, sliced avocado.
