- Non-stick cooking spray or olive oil
- 2–3 cans quartered artichokes or artichoke bottoms
- 1 1/2 cups freshly grated parmesan cheese
- 1/2 cup mayonnaise (i use Trader Joe's Traditional Avocado Oil Mayo)
- 3 cloves garlic, minced
- zest of 1 large lemon
- 1/2 large lemon, juiced
- 1/4 cup pine nuts
- 2 tablespoons fresh parsley, chopped
- ground pepper to taste
- kosher salt to taste
Instructions
- Preheat over to 375 degrees.
- Coat baking dish with cooking spray or olive oil.
- Place artichokes in baking dish.
- Combine parmesan cheese, mayo, garlic, lemon zest, lemon juice, pine nuts, parsley, freshly ground pepper and pinch of salt in a bowl.
- Mound mixture onto artichokes.
- Bake 20-24 minutes until lightly browned and bubbling.
- Garnish with additional parsley if desired. Serve!
