Happy Friday, gang! And Merry Christmas! I’m certain everyone is in overdrive, like me, pulling the last-minute details together for the big day! I’m ready for our White Elephant gift exchange on Christmas Eve. For thirty years, I’ve served charcuterie boards for Christmas Eve, then switched gears for Christmas Brunch with our favorite casseroles from Skiers French Toast, Sausage Egg Casserole, and a Chocolate Chip Coffee Cake. Oh, and I can’t forget lox and bagel, along with a Bloody Mary and Mimosa Bar. Nothing fancy, just family favorites year after year. Today we are sharing an easy recipe for a holiday brunch, if that’s on your agenda this holiday week. We also have a really delicious Iced Egg Nog Latte! You can certainly make this a mocktail, but we added a little whiskey.

Holiday Brunch: Iced Eggnog Lattes
This is such a fun way to enjoy eggnog! An Iced Eggnog Latte has such wonderful Christmas flavors and makes a great brunch drink for a holiday brunch. You can make it as fancy as you like with whipped cream and flavored syrups, or just keep it simple and serve over ice.

Iced Egg Nog Lattes
Ingredients:
- 1 cup cold brew coffee or chilled espresso
- 2 cups Egg Nog
- ¼ cup whiskey or bourbon
- 2 tbsp. Coffee Liqueur
- Optional toppings whipped cream, chocolate and caramel syrup, and cinnamon
Instructions:
- In a pitcher, stir together eggnog, coffee, whiskey, and coffee liqueur.
- Serve in tall glasses and garnish as desired.

Holiday Brunch: Hash and Eggs
This is a great brunch dish for a group because you can make everything but eggs, and keep them warm until you’re ready to make the eggs. And for the eggs, if scrambled eggs are preferred, go for it! This is supposed to be a simple and hearty holiday brunch dish – and it’a crowd pleaser, for sure.

Hash and Eggs
Ingredients:
- 6 medium red potatoes cut into 1/2-inch cubes
- 1-2 tbsp. olive oil plus more for onions and eggs
- 1 large onion chopped
- 6 oz. deli sliced corned beef coarsely chopped
- Kosher salt and black pepper to taste
- 4 large eggs
Instructions:
- Preheat oven to 400º F. Spread the potatoes on a baking sheet and drizzle with olive oil. Bake, turning halfway through roasting, until golden and tender about 30 minutes.
- Meanwhile, in an oven-safe skillet, saute the onion in a drizzle of olive oil until translucent. Add the chopped corned beef, toss to combine, and warm through.
- Add the roasted potatoes to the corned beef and onions, and toss to combine. Place the skillet in the still-warm oven to keep warm.
- Fry the eggs in a drizzle of olive oil until desired doneness is achieved.
- Divide the hash between 4 plates and top each serving with a fried egg. Top with fresh cracked black pepper.
