Happy Friday, ladies! Where did this week disappear to? We are cruising through July at a record pace! If you hadn’t noticed, we’re halfway through the month. This week was particularly busy as Kelly, and I joined my future daughter-in-law, Chelsea, and the ever-adorable photographer extraordinaire Jessica, at the Nordstrom Anniversary Sale. I Can Not wait to share what we tried on and what we brought home! Lots of good things this year at Nordstrom. It’s one of their best sales in several years. All card members can shop the sale, but take heart, the sale opens to the public on Monday! Nordstrom Dressing Room Diaries will commence on Sunday. But today, Kelly and I show you How Mature Women Can Wear Barbiecore Pink.
It’s Friday, gang, and y’all know what that means. Yep, Oscar is on deck to usher in the weekend, along with a delicious cocktail and Galette that are perfect for a hot summer day. Is anyone else besides me waiting for the Barbie movie to be released? It looks like all sorts of fun and I’m always up for a lighthearted movie. And we all know Barbiecore pink has been trending for the past year, which is fine by me since pink is hands down my favorite color. Kelly and I are sporting pink today as we countdown to the Barbie movie.

The weather has been hot and hotter in Georgia. When the going gets hot, the hot slip into a halter top. How cute is this shantung halter top from my all-time favorite designer Ralph Lauren? The muted color scheme goes with so many colors, but I opted for white pants from Theory which is a dream to wear.

J.Crew knows how to do sweater tees. I have several colors of the cashmere tee, and I love this lighter-weight Silk-Blend Cropped Tee version for summer. The tee is cropped, but for a petite, it tucks into a high-waist bottom easily.

This full linen skirt is from Alex Mill. I purchased it last year, but it's restocked for this summer. It's light, airy, and comfortable to wear, plus it has pockets! The Tinto de Verano is a popular summer drink in Spain; it's simply dry red wine (go for a Tempranillo), sweet vermouth, topped with lemon-lime soda. Serve over ice and garnish with a lemon wheel. It's so refreshing and low ABV – a perfect summer libation.
Makes 2 drinks
4 oz. Dry Red Wine
1 oz. Sweet Vermouth
8 oz. Lemon Lime Soda
Lemon Wheel, for garnish
In an ice-filled cocktail shaker, combine the wine and vermouth. Shake until very cold, then strain into an ice-filled highball or wine glass. Top with lemon-lime soda, and mix gently to combine. Garnish with the lemon wheel and serve.
If you are hosting a brunch or luncheon, this Zucchini Ricotta Galette is a wonderful dish to serve; it's a light and flavorful vegetarian dish that highlights summer squash and fresh basil.
1 Store-bought Pie Dough
1 Large Zucchini, sliced into 1/4 inch thick rounds
1 tbsp. plus 1 tsp. Olive Oil
1 Medium Garlic Clove, minced (about 1 teaspoon)
1/2 cup Ricotta Cheese
1/2 cup grated Parmesan Cheese
1/4 cup Shredded Mozzarella
1 tbsp. Slivered Basil Leaves
Egg Wash Glaze
1 egg yolk beaten with 1 teaspoon water
Preheat the oven to 400º F.
Spread the zucchini slices out on paper towels to drain for 30 minutes. Blot the tops of the zucchini before assembling the galette.
In a small bowl whisk together the minced garlic and the olive oil.
In a separate medium bowl, stir together the ricotta, parmesan, mozzarella and 1 teaspoon of the garlic olive oil. Season with kosher salt and black pepper to taste.
On a lightly floured surface, roll out the pie dough to 12-inches round. Transfer the disc of dough to a parchment-lined baking sheet.
Spread the ricotta mixture evenly over the center of the dough, leaving a 2-inch border.
Arrange the zucchini slices in a concentric circle to cover the ricotta mixture. Start at the outer edge.
Drizzle the remaining tablespoon of garlic olive oil over the zucchini.
Fold the edges of the dough to the center, overlapping and pleating the edges to get a nice fit.
Brush the top of the dough with the egg wash glaze.
Bake the galette for 30-40 minutes, until the zucchini is wilted and the crust is golden.
Pull from the oven and top with the freshly sliced basil leaves. Let the galette stand for 5 minutes before transferring to a serving plate and slicing into wedges.
