Happy Friday, gang. And Happy Spring! Friday has rolled around again, just like clockwork. Can you believe it? Easter is next weekend! It’s early this year. While Christmas is fixed to the solar calendar, Easter is based on the lunar cycles, so Easter dates are variable. According to Almanac.com, Easter always occurs on the first Sunday after the Paschal Moon, specifically the first Sunday following the full moon that occurs on or after the March or spring equinox. Phew! All that just to introduce my Easter Table! It’s nothing fancy, but it is festive, and I love to host my family each year for this blessed holiday, and I love to share it with you!

But back to Friday, cuz that’s when we kick off the weekend with Kelly, Oscar, and Ollie by my side. I slipped into a comfy pair of chinos from Ann Taylor and a green linen shirt from J.Crew, which always has a great linen lineup. Kelly whipped up a heavenly Spring Orzotto, and if you like margaritas but hate the sugar, this one is for you!

If it's spring then it's time to break out the gingham! These pants are from J.Mclaughlin, last year but they have a very similar pair with the Rylie Pant in Gingham. So comfortable with a hint of stretch, these pull-on pants are perfect for work and the weekend! And I love the Gamine Shirt from J.Crew – it goes with anything and everything!

I love to set a bright and colorful table for Easter. This year, I added Seersucker Placemats and Seersucker Napkins to my setup. I found gorgeous Pink Coupe Glasses that match the Pink Salad Plates and Pink Bowls.
We swap out the triple sec for orange juice and agave to sweeten this margarita, making it low-sugar and giving it a citrus flavor boost.
This Spring Orzotto is colorful and perfect as an Easter side dish or a light lunch. It comes together quickly and can be served hot or at room temperature.

The directions for the orzo sound more like a risotto recipe- does the orzo really absorb all the liquid? It sounds very good but concerned to try for guests.

Hi Jill, Kelly here, yes it does have a risotto-style preparation. The orzo really does absorb all the liquid. After the white wine is absorbed, add one cup of water at a time waiting until each cup is absorbed before adding the next cup, for a total of 5 cups. The 1 pound of orzo absorbed all 5 cups of water and the starchiness of the pasta creates a light and creamy finish. It’s a wonderful recipe! I hope you give it a go! xo Kelly
