  • 46 boneless, skinless chicken thighs
  • 34 tbsp olive oil
  • 1 tbsp taco seasoning
  • corn tortillas
  • chopped white onion
  • chopped cilantro
  • lime juice
  • salsa
  • chips

Instructions

  1. heat 2-3 tbsp oil in skillet and add chicken thighs
  2. brown well on each side and cook through (chicken thighs are done at 175F)
  3. take off heat and let cool enough to handle, then shred chicken thighs in the pan
  4. set burner to low and add remaining oil. sprinkle about 1 tbsp of taco seasoning (add more or less to taste)
  5. continue cooking on low to incorporate the spices into the chicken while you finish prepping the toppings
  6. warm tortillas in a handy tortilla warmer like i did, or, place several tortillas on a plate and cover with a moist paper towel and microwave for about 20 seconds.
  7. serve tacos with the toppings, lime wedges and chips and salsa.
