it’s friday, gang! what’s on the menu this week? we’re dishing up a taco salad and margaritas. one of my kiddos is in town, so i’m cooking for three. the choices for dinner were a toss-up between shrimp pasta salad or a taco salad. as you can see taco salad won the vote which is fine by me. who doesn’t love a delish taco salad and margaritas? ‘cuz whenever i serve anything remotely connected to mexican or tex-mex fare a margarita is bound to be involved.
since fridays are always a laid back day for me, my style game matches my mood. today, i’m sporting a Lacoste tee last seen here, jean shorts that i discovered are waaaay too big for me (a non-scale victory with FASTer Way to Fat Loss), and a pair of brand new black sneakers with a little bling. the sneakers are similar to a pewter pair i’ve worn and loved for several years. both are from I.N.C. a brand exclusive to Macy’s.
some of you have commented that i’m looking thin as of late. this year i’ve tightened up my day-to-day diet by eliminating most grains, sugar, and carbs. when mr. style was diagnosed with cancer i’d already started my fitness journey. but i continue to be convinced that we can avoid so many diseases if we adopt a nutrient-rich diet. a healthy liver is of utmost importance so most days you’ll see my plate filled with delicious veggies, berries, fat from avocados or salmon, and nuts. sunflower seeds are a great addition to a healthy salad.
believe you me i know i’ve been under a considerable amount of stress these past few weeks and months. so i’ve been paying special attention to my sleep and eating habits which play a big role with our mental health. it’s truly one day at a time for me by placing one foot in front of the other. some days are better than other days (and some minutes are better than others), but i’m thankful for a job i love and friends and family who support me. and of course, i get to meet up with you every day. thank you for your continued thoughts and prayers.
both oscar and ollie make an appearance on the blog today. and my trusty photographer/videographer junior style is behind the camera snapping photos along the way as i sling together an easy peasy taco salad and margaritas that will serve a crowd. how do i squeeze all those fresh limes and lemons? with one of my all-time favorite kitchen gadgets a lemon/lime squeezer.
this batch of margaritas serves sixteen. a glass pitcher rimmed in blue was used for serving. if you choose super-sized margarita glasses like these this recipe will serve eight. or thereabout. ‘cuz these glasses are HUGE. don’t say i didn’t warn you.

all of the ingredients are placed in individual serving bowls so we can concoct a taco salad to our liking.

Great idea, and I’m thinking of that taco salad for this weekend. Shrimp are on sale locally so may make it a shrimp taco salad! You look good, Beth-always thinking of you. Was diagnosed last month with breast cancer so I know about doing each day one by one. Some will always be better than others-but hey that was true Bc (before cancer0 too! How have Oscar and Ollie reacted to the loss of your husband? They grieve also and I am glad they have you and that you have them. Pets are very comforting when experiencing a loss. My husband & best friend died 7 years ago and whenever I sit in his chair my cat will jump up and sit with me, Otherwise, never.

What kind of cat is Ollie? I think of you often as I am on the journey you have walked – a husband with cancer and yes, some days it is just putting one foot in front of the other.
I’m wondering how you managed with your pets. Mine are great therapy but sometimes taking care of my husband and pets seems like too much.

I think of you and your family so often. I have been single since 1996, and I find that making those life decisions, i.e where or how do I downsize are difficult? I pray, and know you will get the guidance you need from our heavenly father.

Grieving is very individual – that is perhaps the only thing I have learned. Keep up the good work. Oh, I bought the red mules from JCrew after last Friday’s pot. I love them.
Looks good–very similar to how I make taco salad. I’ll have to try your dressing–that sounds yummy. Maybe this weekend! I have always eaten really healthy, and fortunately I love food that’s good for me, so I’m lucky that way.
I’ve gotten my boyfriend hooked–(he’s eaten way more vegetables with me than any other time in his life!) I no longer eat breads, etc, although I loved them for years. I admit I stay very thin not eating all that starch, though. It’s made it easy for me to maintain a low weight as a result. And it’s much less inflammation for this old body! I don’t want these new knees to have too much weight to lug around–they need to last me forever! Enjoy the weekend with your gang.

I’m on the other side of the world, so FWO becomes Saturday’s with Hammer (my cattledog) due to the time difference and we do a nice relaxed dinner. It makes a great evening after the crazy week.. I’m in Brisbane and as the days get warmer, coming out of our mild winter, the salads and light meals are a great option.

Guess what I also use my lemon/lime squeezer for? I place garlic cloves for a slight smashing, makes them easier to peel. Märtha Stewart and Ina Garten’s garlic peeling method somehow just doesn’t work for me 🙁

Everything looks delicious! I love a good taco salad. Not to be a nudge but those look like lilies in one of the photos and they are deadly to cats, so if Ollie is a nibbler I’d keep them well away. One of my friends’ sister in law lost her two cats to a bouquet of lilies someone gave her for her birthday and I’ve never forgotten it.
