here’s a startling statistic, americans spend over $20 billion annually on weight loss schemes, yet american adults keep putting on the pounds. new data shows that nearly 40% of the population is obese. a sharp increase from a decade earlier. we all know that being overweight or obese is unhealthy but just talking about the problem doesn’t solve it. while i don’t profess to be a skinny minny this past year, i started a fitness journey that opened my eyes to just how important my diet is. and i’m not talking about ‘going on a diet’ then reverting back to all my old, and dare i say it, bad habits. no, i’m talking about what i eat and drink day in and day out because it’s all about balanced nutrition and training program – not fad diets. guess what else i’ve learned this past year? you can’t out-exercise a poor diet. period. it took me sixty years, but i got it, i really got it – the truth about healthy dieting and nutrition that’s turned into a lifestyle. over the past year, my diet slowly changed (it’s still changing) and the way i looked and felt about myself changed too. honestly, it’s what’s going on inside my head that’s been the biggest game changer. i have more energy throughout the day, sleep better at night, my digestion has improved, and people tell me my skin has never looked better. and i’m actively looking for healthy recipes or tweaking longtime favorites and sharing them with you week after week.

A healthy and nutritious snack perfect for any time of the day.
Ingredients

5cups rolled oats
2 1/2cups mashed banana
1 tsp salt
5 tbsp pure maple syrup, agave, or honey or stevia equivalent amount
2/3 cup mini chocolate chips, optional
2 1/3cups water
1/4cup coconut or vegetable oil
2 1/2 tsp pure vanilla extract
optional add-ins: cinnamon, shredded coconut, chopped walnuts, ground flax or chia, wheat germ, raisins, dried fruit, etc.
Instructions
Preheat over to 380 degrees Fahrenheit. Line cupcake tins. In a large mixing bowl, combine all dry ingredients and stir very well. In a separate bowl, combine and stir all wet ingredients (including banana). Mix wet into dry, then pour into the cupcake liners and bake 21 minutes. These oatmeal cupcakes can be eaten right away, or they can be frozen and reheated.
today, i’m also sharing a few off-duty outfits. this french terry tracksuit finds its way into my suitcase whenever i travel. after a long day, it’s nice to slip into something comfy. this tracksuit was originally purchased for our caribbean cruise last october so i could schlep to the dining room in the morning for a quick cup of coffee. it’s also the perfect outfit to take oscar for a walk or run to the grocery store.
