Hello, and welcome to Kelly’s Kitchen! Today I have a classic recipe for Curried Chicken Salad. Loaded with amazing textures, and sweet and savory flavors like juicy red grapes, salted cashews, tender chicken, crunchy celery, and plenty of zing from the yellow curry dressing, this is a simple recipe that is perfect tucked into a flour tortilla with lettuce and tomatoes, or enjoy it on crackers, or over warm rice. Let’s get to it!
Today we are making Curried Chicken Salad Wraps
Be sure to find the shoppable key ingredients and equipment
½ cup mayonnaise best quality such as Hellmann's or Duke's
½ cup sour cream
1 tbsp. curry powder
1½ tbsps. honey
1½ tbsps. fresh lime juice from 1 lime
¾ tsp. salt
4½ cups cooked shredded chicken (use store-bought rotisserie chicken)
3 large stalks celery diced
1 cup seedless grapes halved
3 scallions, light and dark green parts, finely sliced
Pinch cayenne pepper (optional)
⅔ cup salted cashews
Wrap
Large flour tortillas
Ripe tomatoes, sliced in half-moons
Several romaine lettuce leaves
Step 1
In a large bowl, whisk together the mayonnaise, sour cream, curry powder, honey, lime juice, and salt.
Step 2
To the dressing, add the chicken, celery, grapes and scallions. Toss well to combine, then taste and adjust seasoning, adding the cayenne pepper, if desired.
Step 3
Right before serving, stir in the cashews (adding them at the last minute ensures they stay crunchy).
If making wraps, hold off on adding the cashews.
Step 4
In the center of a large flour tortilla, spoon about ½-¾ cup of the curried chicken salad horizontally, leaving 2 inches on either side.
Sprinkle on several salted cashews, then shingle the tomato half moon slices over the chicken salad.
Step 5
Lay 1-2 lettuce leaves on top. Then fold both sides of the tortilla over the chicken salad. Fold the bottom portion of the tortilla over the center and then proceed to tightly roll it up from the bottom.
Step 6
Slice the wrap in half and serve with more grapes.
We love all kinds of chicken salads and a Curried Chicken Salad might just be our favorite. This is a great meal prep recipe to get you through part of the week. 1. Use store-bought rotisserie chicken to make this recipe quick and easy.
2. To roast your chicken, use a combination of skinless, boneless thighs and chicken tenders. Season with salt and pepper and roast at 400º F. for 25 minutes, until cooked through.
3. Consider adding sweet red or orange bell pepper for color and crunch.
