Hello! Welcome to Kelly’s Kitchen. Today I have a super simple recipe for Mediterranean-Inspired Flatbreads. A combination of Italian sausage, roasted red peppers, red onion and feta top a yogurt feta sauce on a roasted garlic naan. It all comes together quickly and easily – perfect for lunch or serve it with a salad for a weeknight dinner. Let’s jump in!
Today we are making an easy weeknight meal: Mediterranean-Inspired Flatbreads
Be sure to find the shoppable key ingredients and equipment
First, preheat the oven to 450º F. Cook the sausage over medium heat, breaking it up as it cooks, until browned and cooked through. Meanwhile, whiz together the yogurt and half of the feta (4 ounces) with a clove of fresh garlic in a food processor. Once smooth, taste it for seasoning and add black pepper as desired.
Line a sheet pan with parchment and bake the naan for about 5 minutes, just until it’s lightly toasted.
Spread the yogurt sauce evenly on the two (or four) toasted naan. Then top with the sausage.
Then top with red onion slices and roasted red pepper strips. Finish with crumbled feta and we are ready to bake.
Bake the flatbreads for about 7-10 minutes, until the flatbread is warmed through and naan is golden brown.
Top the baked flatbreads with chopped parsley and serve!
