Tortellini with Sausage and Veggies

Ingredients

1 lb. Italian Sausage

Half an Onion, diced

1-2 cloves Fresh Garlic, minced

1 Orange or Red Bell Pepper, diced

1 cup Frozen Corn

1 cup Fresh (or frozen) Peas

1 10-ounce bag of cheese lovers fresh tortellini

1/4 cup Grated Parmesan, plus more for serving

Fresh Basil Leaves, for garnish


Instructions

Get a pot of about 2 quarts of water set to boil. 

Over medium heat, brown the sausage, breaking it up as it cooks. When it’s mostly cooked through add the diced onion and sauté until softened. 

Add the rest of the veggies and sauté until warmed through. Reduce heat to low.

Cook the pasta according to package directions. 

Just before the pasta is finished, scoop about ¼ cup of the pasta water out of the post and stir it into the sausage and veggie mixture. Stir in about ¼ cup of grated parmesan. 

Use a spider skimmer to scoop the tortellini out of the pot and gently stir the tortellini into the sausage and veggies. Cut the heat and we are ready to serve!

Plate servings in wide shallow pasta bowls and top with more grated parmesan cheese and fresh basil.
