Happy Friday, gang! It’s hard to believe that we’ve made it through the first month of the year already, isn’t it? January always feels like it’s both dragging and flying by at the same time—lots of gray skies and cozy nights, but also that hint of excitement that the year is just getting started. Before we dive into February (hello, heart-shaped everything!), we are saying goodbye to January with our last dry January mocktail and a healthy Mediterranean-inspired recipe – and of course, comfortable casual weekend outfit inspiration.

I know we have sung the praises of all the Colette pants at Anthropologie, but it’s for good reason! The Colette Cropped High Rise Wide Leg Jeans are a wardrobe staple. They are perfect in any season and are not only on-trend, but they’re so comfortable. 

It doesn’t get any easier and weekend-perfect than jeans and a sweater. This waffle stitch polo is from last year, but classic style is tried and true and Quince has a very similar version this year.

Mediterranean Cucumber Tonic

We are wrapping up our dry January with this mocktail, the Mediterranean Cucumber Tonic, by Martha Stewart. This is a great mocktail that will be perfect come the warmer temps of spring and summer – it’s so refreshing! If you can’t find the Fever-Tree Mediterranean tonic water, it’s fine to sub in plain tonic water, but the Fever-Tree Mediterranean tonic water is really special because it has less quinine and with the added rosemary and lemon-thyme, it adds a pleasant fragrance and flavor to whatever you use it in.

Mediterranean Cucumber Tonic

This is a great mocktail that will be perfect come the warmer temps of spring and summer – it’s so refreshing!
Makes: 1 Mocktail

Ingredients:  

  • 3 mini-cucumber slices
  • 2 teaspoons fresh lemon juice for muddling plus one lemon slice for squeezing
  • 4 ounces Fever-Tree Mediterranean tonic water
  • 1 sprig of fresh rosemary

Instructions: 

  • In a rocks glass, muddle 1 mini-cucumber slice and fresh lemon juice. Top with ice, 2 more mini-cucumber slices, Fever-Tree Mediterranean tonic water, a squeeze from one slice of lemon, and a sprig of fresh rosemary.

Greek Power Bowls

If you’re trying to eat lighter and healthier in 2025, this recipe for Greek Power Bowls is for you

Ingredients:  

  • ¾ cup whole wheat couscous
  • 1 3/4- pound globe eggplant halved and sliced
  • 2 medium zucchini sliced into 3/4-inch rounds
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • Kosher salt and freshly ground black pepper
  • 2 Persian cucumbers sliced
  • ¾ cup jarred roasted red peppers drained
  • ½ cup pitted kalamata black olives
  • 2 ounces crumbled feta cheese
  • 2 tablespoons chopped fresh parsley leaves
  • Red wine garlic vinaigrette
  • 3 tablespoons red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 ½ teaspoons Dijon mustard
  • 1 clove garlic minced
  • ¾ teaspoon dried oregano
  • Kosher salt and freshly ground black pepper to taste

Instructions: 

  • To make the red wine garlic vinaigrette, whisk together red wine vinegar, olive oil, Dijon, garlic, oregano, and 1 1/2 tablespoons water; season with salt and pepper, to taste.
  • Preheat oven to 425 degrees F.
  • Cook couscous according to package instructions; set aside.
  • Place eggplant and zucchini in a single layer onto the prepared baking sheet. Add olive oil and garlic; season with salt and pepper, to taste. Gently toss to combine.
  • Place into oven and bake for 12-15 minutes, or until tender.
  • Divide couscous into bowls. Top with eggplant, zucchini, cucumbers, red peppers, olives and feta.
  • Serve immediately with red wine garlic vinaigrette, garnished with parsley, if desired.
