Happy Friday, gang! I hope your week has gone smoothly. One thing is for sure: Friday has arrived yet again, and it’s time to welcome the weekend. I’m in Tybee as I type; weatherwise, you couldn’t ask for more perfect weather. It’s been sunny with a high of 80 degrees all week long. Perfection, right?! Sometimes, Mother Nature comes through for you. My dear friend Laurie and I are heading to Savannah for a little retail therapy today. If you missed my post on the Savannah Travel Guide, published on Wednesday you can read it here. I share a few of my favorite shops and restaurants. Laurie and I have lunch reservations at the Olde Pink House today which is on the list. That restaurant never disappoints!

But if you’re looking for a yummy fall recipe let me recommend Cowboy Bean Soup! It’s so easy to make and is delicious! This is my ‘favorites’ list and I’m ready to make my second batch! I slipped into a favorite dress of mine, Indigo Denim from Frank and Eileen. It’s the perfect choice when temps are in between. Leather espadrilles (similar here and here) from Tory Burch are the perfect footwear as they lend a casual yet chic vibe to this weekend look.

Rylie Pants

Happy Friday! J.McLaughlin is one of my first stops for patterned pants – the Rylie Pants are super comfortable. They are a pull-on style with a flared leg. They don’t come in petite, so I have them hemmed just a little so they hit at my ankle. I love the color combination of this stadium plaid, they feel fresh and light for a warm start to fall.

One thing I look forward to in the Fall is breaking out my loafers. The woven Raffia Loraine Bit Loafer is a perfect loafer for the transition seasons.

Black Mole Margarita

Recently I was gifted a bottle of Mezcal Galán so a special mezcal margarita seemed like the perfect way to enjoy this wonderful mezcal. A Black Mole Margarita highlights the chocolatey flavors of Mexican Mole with mole bitters and homemade cocoa-and-orange syrup. Though there is a little prep involved, this cocktail is simple to make and it’s such an interesting take on a margarita.

Cowboy Beans (Frijoles Charros)

Cowboy Beans is a perfect fall recipe for our Mexican-inspired Friday. Savory and brothy, this bean soup is dead simple to prepare and it’s a crowd-pleaser! Serve it with cornbread and a salad for a complete meal.

Cowboy Beans (Frijoles Charros)

Ingredients:  

  • 1 lb. Bacon slices cut into 1/2-inch pieces
  • 1/2 Onion diced
  • 1 Jalapeño sliced into rounds
  • 2 tsp. Kosher Salt
  • 3 Cloves Garlic pressed or minced
  • 1 tsp. Ground Cumin
  • 3 cans Low Sodium Pinto Beans drained and rinsed
  • 1 tsp. Dried Oregano
  • 4 cups Low-Sodium Chicken Broth
  • Garnish
  • Lime Juice
  • Diced Onion
  • Fresh Cilantro

Instructions: 

  • Get a Dutch oven or large pot and over medium heat, cook the bacon pieces, stirring occasionally until browned and evenly cooked through. Take care not to overcook the bacon; Don’t let it get super crispy, then cut the heat.
  • Use a slotted spoon to transfer the cooked bacon from the Dutch oven to a paper towel-lined plate. Pour off all but about 1-2 tablespoons of the bacon fat. Turn the heat back up under the Dutch oven to medium heat and add the diced onions and the sliced jalapeños to the remaining bacon fat. Add 2 teaspoons kosher salt. Stir the onions and sauté until softened.
  • Once the onions have softened, add the garlic and cumin. Stir to combine and toast the seasoning with the aromatics until fragrant, about 30 seconds. Then add the beans and the oregano. Stir the beans and oregano into the aromatic mixture.
  • Add the bacon back to the pot and add the chicken broth.
  • Stir the Charro Beans and bring up to a simmer. When simmering, reduce heat to maintain a simmer and cover. Simmer covered for 7 minutes. After 7 minutes, uncover and continue simmering for 3-5 minutes. Cut the heat and taste the Frijoles Charros. Add kosher salt if needed. Then ladle individual servings into bowls and give each serving a squeeze of lime juice. Top the servings with a diced onion and fresh cilantro leaves.

    I’m loving Kelly’s hair, how is she curling it?

    1. Hi Kemper, Kelly here…my hair has some natural curl to it so I use a hair balm, then I basically scrunch it up while it’s wet and use a diffuser attachment on my hairdryer to dry the scrunched up natural curl. Then I use a curling iron to accentuate some of the curls. Pretty simple…never turns out the same way twice – LOL. I hope that answers your question!

    I thoroughly enjoy your newsletter and it has provided me with very good advice and I have definitely stepped up my game. However, having so many photos of you in the same outfit as a bit tiresome. One or two is adequate to get the point across. If they show different versions of an outfit as in dressing up or dressing down a garment that I would get. But the same Outfit photos over and over and over is too much.

      When we publish Fridays with Oscar we also include photos of the food and cocktail and Oscar and Ollie.

      SWTH(afternoon) and S are much different posts and may be more to your liking as we curate different outfits/beauty products instead of just one.
