thank goodness it’s friday! hey gang, it’s the friday before mother’s day. what are your mother’s day plans? will you have a virtual brunch with the mom’s in your life on sunday? we have a different take on a buffet-style brunch for mom this weekend and a beautiful hibiscus cocktail. whatever your plans are, i hope you are able to take a special moment to reach out to your loved ones and celebrate “mom”.
outfit of the day
for our special brunch i wanted to dress up a bit. i have been loving the pleated midi and maxi skirt trend all year and this polka dot skirt is so light and airy, perfect for a warm spring day. keeping it light, i have an ecru-colored sweater. i love to mix creams and off-white with true white, it’s a semi-monochromatic look that is classic and elegant.
my cream colored cap toe pumps really tie back to the color of the sweater. completing the look i have a statement necklace, and of course bangle bracelets.

brunch toast trio and easy caprese salad
not having a large gathering to celebrate mom this year doesn’t mean you can’t put on a fun buffet-style brunch. a variety of toasts, topped with fruits, cheeses, veggies, eggs and nut butters make a pretty presentation and put a special spin on something as simple as toast.
we have: strawberries and ricotta with black pepper and a balsamic drizzle. avocado toast two ways: almond butter with avocado, red pepper flakes, sea salt and a honey drizzle; and avocado with hard-boiled egg and a peach jalapeño jam drizzle. and lastly, creamy mushrooms with fresh parsley and thyme.
for the mushrooms, i simply sliced and sautéed in butter then added about half a cup of heavy cream. salt and pepper to taste. bring to a boil then reduce the heat and simmer, stirring occasionally until thickened.
an easy caprese salad finishes the menu. using small heirloom tomatoes and mozzarella pearls makes it all come together so easily! some fresh basil leaves, a drizzle of olive oil and balsamic, salt and pepper – and that’s it!
hibiscus vodka cocktail
this recipe actually came from the back of the hibiscus syrup package! it’s very simple: 1 ½ ounces vodka, 1 ounce hibiscus syrup, 3-5 ounces tonic water or club soda and a dash of bitters. pour over ice, stir and strain into your glass. i found hibiscus flowers in syrup, which is a lovely garnish in the bottom of the glass.

the chandelier is from Pottery Barn but is no longer available. 🙁 it’s about three years old.

that was such a cute photo! oscar has a new buddy that’s just like the energizing bunny – he just doesn’t stop! but the two have turned into fast friends with lots of romping around inside and out.

Everything looks so lovely. I like the skirt and the two toned shoe is one of my favorite ways to pull a look together. The food looks so good. I’m on a diet to lose the quarantine 5 so I’m careful with the avacodas and bread righ now but I think Avacoda toast with a poached egg is one of my favorite meals anytime of day.
You made my day with those sweet dogs. I expect Oscar has an equal there in little sweetie pie. 😄 He looks like he has a lot of spunk.

Don’t you look lovely, Beth. The food is all right up my alley. I would love it all. I’ll have to pin this to make a similar meal for us sometime soon. As for how I will celebrate, I will be zooming with my son, and he sent me flowers–beautiful white and lavender colored tulips that are sitting staring at me right now. (I honestly don’t know how he got them since I heard on the news that flowers are not going to be easy to finagle this holiday, as the distribution for them is so disrupted.) Joe’s daughter sent me some delivered eggplant rollatini, and I’m looking forward to it Sunday. I got out some old photos of my mom and am reminiscing and missing her.
