Snowflakes & Sunshine. It’s Casual Friday on Fridays with Oscar

Happy Friday, gang –  TGIF! It’s been a snowy week here in Athens, and believe me, when the South gets snow, everything shuts down! So we have had a few days of hunkering down at home, which has been nice, actually. It forced me to slow down a bit and focus on small tasks around the house. Though the temperatures are still freezing, we’re back in the sunshine today to celebrate the weekend with a sunny mango passion fruit mocktail and a wonderful Thai-inspired dish – easy and satisfying, the perfect way to kick off another chilly weekend!

Fridays with Oscar is all about keeping things comfy and casual for the weekend, but with just the right touch of style. Red corduroy pants from J.Crew and a rugby-striped polo sweater from Banana Republic are my go-to combo for today – a bright color combination that will brighten your mood and weekend. It’s cozy, effortless, and perfect for running errands or a casual lunch. 

My Vince Silvana Suede Ankle Boots have been seeing a lot of action this winter, which makes their higher price tag 100% worth the investment. The neutral suede goes with virtually any outfit I put together!

Kelly’s Casual Friday Outfit

Well, it’s a Banana Republic and J.Crew kind of weekend for me too! I recently found these Corduroy Barrel Pants at Banana and I have to tell you they are my new favorite winter pants! They come in petite, the fit is true to size – I am wearing petite 0. The cords are nearly sold out, but this style comes in chino too, and I think I will add the chino version to my list for spring because these pants fit a petite like a dream! 

I have had my eye on the Franco Sarto Riley Loafer for months now, this color combination works with so many things in my wardrobe! But this loafer style comes in a few different finishes. Franco Sarto is a well-made, affordable brand that I love for their on-trend, yet classic styles.

Mango Coconut Passion Mocktail

This Mango Coconut Passion Mocktail is like tropical sunshine in a glass! It’s a welcome sip of tropical flavors as we experience arctic temperatures, here in the South. The cilantro and jalapeño give it a nice herby bite, but they are optional if you prefer to leave them out.

Mango Coconut Passion Mocktail

This Mango Coconut Passion Mocktail is like sunshine in a glass! The cilantro and jalapeño give it a nice herby bite, but they are optional if you prefer to leave them out.
Makes: 2 Mocktails

Equipment:

  • 1 blender

Ingredients:  

  • 1 cup mango juice
  • 1 cup passion fruit juice
  • 1 cup coconut water
  • 3-4 sprigs of cilantro plus more for garnish
  • 3-4 jalapeño slices optional

Instructions: 

  • Combine all ingredients in a blender and blend until combined.
  • Pour into ice-filled Collins glasses and garnish with cilantro leaves.

Thai Basil Beef Rolls

I am a big lover of Southeast Asian cuisines and these Thai Basil Beef Rolls are perfect! All of my favorite flavors and textures are there; the savory spiced beef with the cool crunch of cucumbers and the refreshing flavors of basil and cilantro is a heavenly combination. I think they would make a great addition to an appetizer spread…maybe for the Super Bowl? You can certainly use smaller tortillas and fill them a little less to get smaller, tightly rolled taquito-like beef rolls to serve a crowd.

Thai Basil Beef Rolls

The savory spiced beef with the cool crunch of cucumbers and the refreshing flavors of basil and cilantro is a heavenly combination!

Ingredients:  

  • 1 ½ pounds ground beef or chicken or pork
  • black pepper
  • 4 cloves garlic chopped
  • 1 tablespoon fresh grated ginger
  • 1-3 teaspoons Chinese 5-spice
  • 1/3 cup tamari or soy sauce
  • 1/4 cup Thai chili sauce
  • 1/4 cup chopped green onions
  • 4 Persian cucumbers chopped
  • 2 cups cilantro chopped
  • 1/2 cup Thai basil chopped
  • 1/3 cup chopped roasted peanuts
  • 8-10 flour tortillas warmed
  • chili garlic sauce for serving
  • toasted sesame oil for serving

Instructions: 

  • In a large skillet, cook the beef with black pepper over medium heat, breaking up the meat as it cooks until browned, about 5 minutes. Add the garlic, ginger, and Chinese 5-spice, and cook another minute. Add the tamari and sweet Thai chili sauce. Bring the mixture to a simmer and cook until the sauce coats the beef, 3-5 minutes. Stir in 2 tablespoons of chopped green onions. remove from the heat.
  • Place one tortilla at a time in the microwave for 15 seconds. Spoon the beef down the center, then top with cucumber, cilantro, basil, green onion, and peanuts. Fold the tortilla over the filling. Then fold the sides and ends of the tortillas over the filling and roll forward. Repeat with remaining ingredients.
  • Serve warm with extra soy, chili garlic sauce, and toasted sesame oil for dipping. To make this a dinner, serve with rice on the side.
