Cookies for the Holidays

1. Coconut Macaroons

I want to share a great holiday cookie recipe. Last year, I brought these Coconut Macaroons to Beth’s Holiday Cookie Exchange and they were a big hit. Christmas cookies most often seem to be frosted sugar cookies, snickerdoodles, thumb jam cookies, or the like. So these cookies are an unexpected surprise. They’re quick and easy to whip up, too. Another plus is that this recipe is gluten free!

2. The best sugar cookies

No matter the holiday, Sugar Cookies are always a winning treat. They can be cut into whatever shapes you like and decorated to your heart’s desire. I have come to realize that having a reliable, easy (read: hard to screw up) Sugar Cookie recipe is a must. It is typical for me to over-work dough; this recipe really solves that problem because it all comes together in the food processor. Let’s get to the easiest, Best Sugar Cookies!

3. Dark Chocolate Brownie cookies

How about a sweet midweek pick-me-up? I really love these cookies because they are exactly like the best part of a brownie; slightly crunchy edges and a crackly top, with a soft and chewy center. Super chocolatey and fudgy. A slightly salty edge tempers the rich chocolate and rounds out the flavor. Absolutely perfect with a cup of coffee in the morning, or a cup of tea in the afternoon. Or, maybe a glass of red wine after dinner. Let’s get to these Dark Chocolate Brownie Cookies!

4. Easy Fudgy Peanut Butter Cookies

I wanted to make some holiday cookies that aren’t super Christmasy, don’t require a ton of effort (i.e. frosting and decorating), but that I would be proud to bring to a cookie exchange. Hello Easy Fudgy Peanut Butter Cookies! These cookies are dense and fudgy with real peanut flavor; they flatten out enough during baking to get slightly crispy edges, while the centers are moist and chewy. Let’s Bake!

5. Ginger Chocolate Cherry Cookies

It’s great you’re here today, because I have a sweet treat. A cookie recipe perfect if you’re looking for something new and different. If you’re attending a holiday cookie exchange party, or just want some amazingly delicious cookies to enjoy, these have to be at the top of your list. Crisp around the edges, with soft centers, these Ginger Chocolate Cherry Cookies are studded with melty chocolate chunks and chewy dried cherries. A flavor bomb to be sure, each bite is a super satisfying textural experience, too. Let’s do these cookies!

6. San Francisco’s Ice Cream Sandwich

IT’S-IT, San Francisco’s Ice Cream Sandwich all starts with the cookie. So while this recipe ends with a delicious ice cream treat, it’s all about the oatmeal cookie. These cookies are fantastic on their own. You can partially dip them in chocolate if you like. Or go all the way and make the best ice cream sandwich in the world!
