There is a lot written about, and diet fads based upon, the Mediterranean Diet. But if you just think of the three basic principles below, you really can’t go wrong. The eating habits of Mediterranean people are straightforward and easy to follow:
1. Mediterranean Quinoa Salad with Feta
Hello and welcome! I love this salad because it’s basically layers of fresh veggies drizzled with a wonderfully light feta and lemon dressing. When presented to a table, it’s beautiful and so very inviting. Especially on a hot summer day. We have quinoa and beans, for protein and a little heft; we have some super greens, a rainbow of vegetables and some red grapes thrown on for a juicy sweet bite. This salad works well in winter too, just swap the big heirloom tomatoes for cherry or grape tomatoes.

2. Mediterranean Tuna Salad with Pasta
Today I have an incredibly easy salad, customizable and so very delicious. A citrus dijon dressing dresses this tuna salad; with celery, cucumber, radishes, green and red onions, and plenty of herbs, Kalamata olives and Pepperoncini for flavor. The pasta is totally optional; this salad is fantastic on its own or as a sandwich. But I had a craving for cold pasta, and I love how the spirals of perfectly al dente Rotini pick up bits of tuna, lemon zest, seasoning and herbs – Oh my goodness, this is so good!

3. Sheet Pan Mediterranean Chicken
Today’s Sunday Supper is an easy meal with rich Mediterranean flavor. It all comes together on a sheet tray and is ready in about 40 minutes. There are few recipes simpler than a sheet pan dinner. This one is made even simpler with cute, tiny little potatoes that require no slicing. With fennel, cherry tomatoes, olives, feta and fresh herbs, this Sunday Supper is colorful and delicious.

I hope you’re adjusting well to the beginning of daylight savings time (if they do that where you live…). It usually takes me a couple days to get in the swing of it. This week’s frigid temperatures around the country mean one thing to me: Chicken Soup, stat! I have been pining for Avgolemono Soup for a while now, and this week, the time was right! Avgolemono Soup is a Greek Lemon and Chicken Soup with rice, carrots, celery and onion. It’s creamy thanks to a silky beaten egg, lemon juice and broth mixture (the avgolemono sauce), which makes this dairy-free recipe so very comforting.

Today’s recipe is a fun mash up of Greek and Mediterranean flavors folded in a toasted flour tortilla. Yes, Mediterranean Quesadillas! This recipe is quick and easy; perfect if you’re cooking for one and great for any meal of the day. But this isn’t just a can of chickpeas tossed in a tortilla with veggies and cheese, we are going to jazz it up a bit by frying the chickpeas with herbs until their exteriors are golden, a little crispy, and their interiors are creamy and soft.
