Fall finally feels like it’s here. For how long, I don’t know. But the cooler weather has really put me in the mood for a good bowl of soup. Below, I’ve collected soups perfect for all. 1. The Very Best Lentil Soup
A chilly day calls for a warm and hearty soup to start the week. Today’s recipe for Lentil Soup is wonderful on its own; super-flavorful and hearty, but it’s the toppings that really win me over. 2. Chipotle Pumpkin Soup
If October could lay claim to its own fruit, I think it has to be the Pumpkin. Scientifically, a fruit – technically a berry, pumpkins are everywhere in October. Pumpkins find themselves in both sweet and savory recipes; in our coffees and cocktails; and decorating our doorsteps and tabletops. Today, I have a velvety, savory, spicy Chipotle Pumpkin Soup. This soup happens to be vegan, though you wouldn’t know that just to taste it. We could all use a few more plant-based recipes in our repertoire, so let’s get to it!

3. Sazon Chicken Tortilla Soup
Today’s post is kind of a two-parter. The first part is an easy chicken meal prep; then we will use half of the prepped chicken for today’s recipe and the other half for tomorrow’s recipe. So maybe it’s more of a three-parter! For today, we are going to turn seasoned, baked chicken thighs into a flavorful Chicken Tortilla Soup; with black beans and corn. Let’s bake off some chicken thighs!

4. Chicken Noodle Soup
I think some Chicken Noodle Soup is in order. I asked Alex to smoke a chicken for this recipe and I am glad I did, because while I would have been happy with a store-bought rotisserie chicken, the smoked chicken really added a ton of amazing flavor. The other incredible flavor boost in this soup is dill. A lot of dill.

5. Avgolemono Soup (Chicken and Lemon Soup)
This week’s frigid temperatures around the country mean one thing to me: Chicken Soup, stat! I have been pining for Avgolemono Soup for a while now, and this week, the time was right! Avgolemono Soup is a Greek Lemon and Chicken Soup with rice, carrots, celery and onion. It’s creamy thanks to a silky beaten egg, lemon juice and broth mixture (the avgolemono sauce), which makes this dairy-free recipe so very comforting.

6. Coconut Chicken Noodle Soup
While the traditional version of this comfort food might not be high on your summer cooking list, this Coconut Chicken Noodle Soup is a great alternative. The Thai flavors of coconut milk, lime, cilantro and ginger make this chicken noodle soup a perfect summer soup.
