1. The Best Stuffed Avocados
Today I have a fun Stuffed Avocado Recipe that is really great because it combines savory Mexican flavors for a rich and satisfying breakfast, brunch or dinner. It kind of reminds me of a Mexican-style Eggs Benedict. Gluten-free of course, because we have the avocado playing the role of bread. This is a quick recipe that is easy to scale up for a group. 2. Halibut Ceviche with Avocado
We are continuing on today with another easy recipe, perfect for hot summer weather. Ceviche is a cold seafood salad that is light and refreshing. Ceviche originated in Peru, where historically the fish is “cooked” by bitter orange juice. We do it here with lemon and lime juice. The acid in citrus juice denatures the proteins in the fish flesh, firming it up and turning it opaque. Essentially cooking the fish. You can use all kinds of different seafood in ceviche. On Kelly’s Kitchen, we did a shrimp version. Today, we are making Halibut Ceviche. Let’s get to the recipe!

3. BBQ Chicken Tacos with Mango Avocado Salsa
Our recipe today is perfect for a summer Sunday grill out. July was a wet and stormy month here in Athens and we haven’t fired up the grill in a while. So today it was fun to get outside and enjoy the sunshine, grilling some chicken for these awesome Barbecue Chicken Tacos with Mango Avocado Salsa.
I like this recipe because it’s an interesting mashup of American style barbecue and a tropical salsa with fresh Mexican/Caribbean flavors, folded in a corn/flour tortilla with sharp cheddar cheese. Let’s get right to it!

4. Avocado Toast Trio
I love Avocado toast, it’s so easy and customizable. They go sweet or savory and are perfect for breakfast, lunch or dinner. And, they’re a perfect meal to prepare for just yourself. My favorite go-to is with almond butter, honey and red pepper flakes, because it’s so easy. But if I want to get fancy the other two I will share today are just as perfect. So, let’s get to my Avocado Toast Trio.

5. Tropical Cobb Salad with Mango
I had a couple mangoes to use or lose so today we have a summery, fun take on a Cobb Salad, Tropical Cobb Salad with Mango. This is a beautiful and irresistible main dish salad, I know because Alex and I ate the entire thing in one go, right out of the serving bowl! 6. Southwest Bean Burgers with Avocado and Slaw
With all the meat-focused cookouts and barbecues this summer, sometimes a meatless burger is just the ticket.
My experience with black bean burgers has never been anything to write home about; the often dry, hockey puck of a burger alternative has left me feeling very unsatisfied in the past. I am happy to report, though that my mind has been changed.
