Few things are as comforting on chilly winter days than a chicken dinner. The aroma of roasting chicken fills the kitchen with a warm and comforting homeyness that can’t be beat. Today, as we are exactly midway through winter, I rounded up several of my favorite chicken dinner ideas. From classic salt and pepper roasted chicken to spicy Sichuan chicken and a few Mediterranean ideas thrown in the middle, today’s post offers a wide array of Great Chicken Recipes.

1.Chicken Thighs with Parsley and Lemon

Today’s recipe really took me by surprise. I thought I knew how this would be while I gathered ingredients, imagining the flavors. But I was blown away by the amazing savory, herby flavor of these Chicken Thighs with Parsley and Lemon. Have you ever sautรฉd parsley as if it were thick leafy greens? I hadn’t, but now I want to add sautรฉd parsley leaves to everything!

2. Easy Sichuan Chicken

Today we are making Easy Sichuan Chicken. Pretty often I have a craving for Chinese Food, it’s one of the things I miss most about living in San Francisco. There is amazing Asian food in Georgia, the stretch of Buford Highway is famous for its variety and quality of Asian restaurants and markets. Trouble is, it’s a bit too far for me to drive there every time the craving for Chinese food hits. I have learned since starting Djalali Cooks that I can make my favorite Chinese dishes myself, and they are just as satisfying.

3. Spatchcocked Roasted Chicken

Salt and pepper roasted chicken was one of my favorite dishes growing up. It’s hard to beat a simple, roasted chicken. So back when I was single, cooking for just myself, I would often roast a whole chicken on Sundays and meal prep for the week. The only difference between my single days and now is that I always spatchcock the bird. Spatchcocking makes for a more even cook, so that the breasts stay juicy and don’t get overcooked.

4. Chicken and Sausage Gumbo

Even if you can’t make it to New Orleans for the parades and parties, you can make a delicious pot of Chicken and Sausage Gumbo to celebrate the day. I always felt super-intimidated by Gumbo; the toasty roux seemed finicky and too easy to ruin. But, I found a technique on America’s Test Kitchen for a dry roux that takes out the challenge, and time, of stirring and and babysitting a fat-based roux on the stovetop. We will toast the flour in the oven, then make the roux. Interesting, right? Let’s get right to it!

5. Chicken Piccata

Today’s Sunday Supper is a classic dish: Chicken Piccata. Thin chicken breast cutlets in a bright lemony sauce with capers and shallots. Usually when I make chicken, we prefer thighs; they are more moist, tender and flavorful than breasts. This preparation of breast cutlets keeps them moist and flavorful though, because we will finish the cutlets in the sauce.
