We love, love, love pasta in our household.ย  Such an easy opportunity to be creative in our cooking.ย  From the actual pasta itself to meats, vegetables, and beyond—pasta provides a near infinite pallet to explore your culinary skills.ย  Below, I’ve collected 6 pastas you probably haven’t tried.ย  (Or maybe you have.) 1. Bacon and Corn Pasta with Tomato Salad

I am loving cooking with corn this summer. We have had a number of recipes recently featuring this sweet summer veggie, and today I am adding one more to the list with Bacon and Corn Pasta with Tomato Salad. There are a lot of reasons to love this dish! The meaty bacon and large pasta shells, punctuated with pops of sweet corn, all cloaked in a glossy, savory sauce and topped with a bright and fresh tomato salad. Let’s get right to it!

2. Caramelized Corn & Asparagus Pasta

Let me start by saying I love this pasta dish! Caramelized corn with thinly cut asparagus, seasoned with turmeric and tossed with a light sauce of garlic, white wine, and pasta water, finished with a squeeze of fresh lemon juice. It’s so light, yet so full of sweet corn flavor; the earthiness of turmeric and the bright white wine make such a great combination. A perfect summer pasta dish with bright colors and sunny flavors. 3. Sun Dried Tomato Pesto Pasta

Hello! Welcome, everyone. Have you ever had sun dried tomato pesto? I couldn’t recall if and when I had ever had it, actually. So I thought I’d make up a batch and put together a couple recipes that really let the sun dried tomatoes shine their brightest. Sun dried tomato pesto is super simple to make and it’s such a flavorful component to add to all sorts of recipes, both mains and appetizers. Today I have Sun Dried Tomato Pesto Pasta, so let’s get to it!

4. Bucatini with Asparagus and Morels

Hello, welcome! This dish is beautiful: vibrant, green spring asparagus and the morels add something extra. The simplicity of pasta tossed in olive oil with snappy asparagus and earthy morel mushrooms really speaks to me. Add a little garlic, lemon, some parmesan, red pepper flakes and black pepper, and you’ve got a simple, beautiful meal that really satisfies. Let’s get to it: Bucatini with Asparagus and Morels!

5. Summer Pasta with Zucchini and Tomatoes

I thought a nice, light summer pasta dish might be just the ticket for today. This dish comes together really quickly; it’s so fresh and veggie forward with fresh herbs and a lot of fresh garlic. We are using Pappardelle pasta for this recipe. I love the Cipriani Pappardelle because while it is a long, wide strip of pasta, it’s very thin and light. Let’s get right to it, like I said, it’s a quick cook recipe – perfect for a weeknight.

6. Linguini with Pancetta and Broccolini

Today we have a one pot pasta dish: Linguini with Pancetta and Broccolini. I really love these pasta dishes that utilize the pasta water to make a thin sauce that coats everything in delicious flavor and richness, but is not cream-based. The method is super simple and the results are amazingly light and fresh. So let’s get right to it!
