one of my best-kept secrets for years is making a casserole late at night before i head to bed. then all i have to do in the morning is pop it in the oven. and voila! a delicious meal that feeds a hungry crew. it couldn’t be easier to roll out of bed, slip on a pair of furry slippers and scuff into the kitchen before those sleepyheads open their eyes. what’s better to wake up to than the aroma of freshly brewed coffee? unless it’s a ham, mushroom, asparagus frittata. and maybe some homemade muffins.
if there isn’t any time leftover for a quick shower before breakfast? no problem. there’s an easy solution with the addition of a robe. the fashionista in me couldn’t resist a little pattern mixing with polka dots and a bold print. i didn’t want to show up at the breakfast table without adding a bit of pizazz? right?
fresh fruit, yogurt, granola, orange juice and tomato juice round out our breakfast choices. and i’m sharing the frittata recipe with you. it’s healthy, delicious and can be whipped up in ten minutes. i baked mine in the kate spade square baker but frittatas can be cooked in a skillet.

Quick questions about the frittata – how long did you cook it in the oven (since you didn’t do the partial cooking on the stovetop), and did you mix it up the night before and then pop the uncooked frittata in the oven in the morning?

My Dad asked for handkerchiefs for Christmas a couple years ago and the only store in town that had them was Lord & Taylor…Hooray for them! The store is nicely laid out, too. …Easy to shop..
