cheers to the weekend, gang! and cheers to FWO Cinco de Mayo style. this margarita-loving girl couldn’t let this celebration go by without a nod. out came my blender to whip up a batch of frozen margaritas. margaritas on the rocks with fresh ingredients are my all-time favorites. but there’s a time and place for frozen margaritas, especially on a hot summer day. a tasty and might i say a healthy version of a taco salad is on the menu too. so come on in and sit a spell.
fridays are always about oscar, but my Maine coon cat ollie loves to join us from time-t0-time especially when we’re on the screen porch. this is one of her favorite haunts, where she spends hours looking outside at all of the flora and fauna. while ollie is mainly an indoor cat, she comes outside when i’m puttering in the garden and roams around the yard. the birds sound the alarm as they know a predator when they see one. it’s fascinating to watch nature in motion. not to worry, as i’m a bird lover as well as cat and dog lover, so all is well with my feathered friends and their birdhouses.
FWO Cinco de Mayo
today’s outfit is fit for a beautiful spring day. this cropped cardigan from Ann Taylor is a gorgeous shade of purple certain to brighten even the dreariest day. slowly but surely, my whites are making an appearance. a white tee is a wardrobe must-have. typically, i add two or three new ones to my closet each year as they are on style repeat all summer long. sales are a great time to stock up and save. Talbots and J.Crew even Old Navy are brands i can rely on for a simple crewneck tee. a white denim skirt (old, similar here and here) is a nice alternative to shorts or blue jeans, and i like to have at least one white denim skirt hanging in my closet.
accessories are the icing on the cake to any outfit. if you’ve followed the blog for any length of time, you know i sing the praises of metallics. metallic shoes or metallic belts act as neutrals. when in doubt, reach for silver or gold. one of my favorite gold belts is from one of my favorite designers Ralph Lauren (old, similar here and here), and was a splurge at the time of purchase. but if i pro-rate this purchase over its lifespan, honestly, it was a bargain. accessories can be investment pieces if you go the luxury route, but since belts, handbags, scarves, and jewelry can last a lifetime, i don’t mind spending a pretty penny.
the metallic gold sandals are from Banana Republic (old, similar here, here, and here) and see lots of action once summer rolls into town. honestly, this pair has turned into my go-to sandal since they arrived on the scene last summer.
6cups chopped romaine lettuce (or lettuce of your choice)
1cup tomaotes, diced (I use cherry tomatoes, halved)
1 medium avocado, diced
1cup shredded Mexican cheese
1 can black beans, rinsed and drained
tortilla chips
ranch dressing or dressing of your choice (I like Trader Joe's Green Goddess dressing)
Instructions
Add the ground beef to a large skillet over medium heat. Cook, breaking the meat into pieces until browned and cooked through. Add the garlic powder, chili powder, cumin, salt, pepper, and water to the skillet. Stir to combine and cook an additional 3-5 minutes until the water has evaporated.
Layer the romaine lettuce in a bowl then add ground beef, black beans, avocado, tomatoes cheese, and tortilla chips.

I made this taco salad tonight for dear friends traveling 2 hours to see our new home. I used Beyond Meat ground “beef” as we eat plant-bases, and it was delicious! The only thing I added was lime wedges to squirt over top.
