Happy New Year, Gang! Itโ€™s our first Fridays with Oscar of 2025 and we are so excited to kick off every weekend in the new year with casual outfits and great recipes. We have a lot to look forward to in 2025. Certainly the most exciting is the May arrival of my first grandbaby! With so many great things ahead, we kick off the new year with a fantastic mocktail and a delicious recipe for New Yearโ€™s Black-Eyed Peas.

Welcome 2025 with a Mocktail

We are excited to explore mocktail recipes all January long, and this recipe for Salty Ginger-Ade is a refreshing and invigorating mocktail that packs a punch! It is a little sweet from the dates and spicy from the ginger beer โ€“ such a great drink to enjoy any time of day and works beautifully as a happy hour cocktail replacement.

Salty Ginger-Ade

A great drink to enjoy any time of day and works beautifully as a happy hour cocktail replacement.
Makes: 2 Mocktails

Ingredients:  

  • 2 oz. lime juice freshly squeezed
  • 2 Medjool dates pitted
  • 2 pinches fine sea salt
  • 2 pinches ground cumin
  • 12 oz. ginger beer
  • Garnish: mint sprigs

Instructions: 

  • Add the lime juice, dates, salt, and cumin to a shaker. Let sit for 5 minutes, then muddle until the dates are pulverized.
  • Add ice and shake until well-chilled, then pour unstrained into a tall glass.
  • Top with ginger beer and stir well to combine.
  • Garnish with a mint sprig.

New Year’s Black-Eyed Peas

Even though weโ€™re coming to you on January 3, this recipe for New Yearโ€™s Black Eyed Peas is great all winter long! Itโ€™s brothy and hearty, delicious and healthy. The kale gives it an energetic boost both in color and nutrients. Definitely add this recipe to your winter cooking repertoire.

New Yearโ€™s Black-Eyed Peas

This recipe for New Yearโ€™s Black Eyed Peas is great all winter long! Itโ€™s brothy and hearty, delicious and healthy.

Ingredients:  

  • 2 tbsp. Olive Oil plus more for drizzling
  • 6 oz Bacon cut into 1/2-1″ pieces
  • 1 medium Onion finely chopped
  • 5 sprigs thyme plus leaves for serving
  • 4 garlic cloves smashed and chopped
  • 2 cups Black Eyed Peas drained
  • 8 cups Chicken Broth
  • Baby kale
  • Kosher salt freshly ground pepper

Instructions: 

  • Heat olive oil in a large Dutch oven or pot over medium heat.
  • Add bacon and cook, stirring occasionally, until the bacon starts to look shiny and gets some color, for about 5 minutes.
  • Add onion and cook, stirring occasionally, until golden and tender, about 5 minutes.
  • Add thyme sprigs, garlic, black-eyed peas, and 8 cups chicken broth and bring to a simmer over medium-high.
  • Reduce heat to medium-low and simmer gently, skimming any foam from the surface, until beans are tender (about 35-34 minutes). Discard the thyme, then add the kale and simmer until tender.
  • Season with salt and pepper to taste.
  • To serve, drizzle beans with olive oil and top with thyme leaves and cracked pepper.
