Happy Friday, gang! Another crazy week has come and gone, and I haven’t even had time to think about packing for Paris. It’s been one appointment after another since the trees came tumbling down last week, along with power and internet. I’m up and running again, but in the interim, I leased a new car (Subaru Forester), had a dermatologist appointment, box springs for a new bed were delivered, a car inspection for the VW Tiguan, then a mad dash to Sephora and turning the VW into the dealership now located in Stone Mountain, Georgia. Phew! And I had to sneak in work in between all the appointments.
I have to admit I don’t miss big city life when it comes to traffic. It took me sixty minutes to drive sixteen miles on Thursday… The distance between The Georgia Mall and the Volkswagon dealership. Zipping around Athens can be challenging at times, especially on game days, but if you don’t have to head to Sanford Stadium on Saturday afternoon, the rest of the town is pretty quiet and has minimal traffic. But Atlanta and the surrounding areas are quite another story. I love to bop down to the Big Peach any chance I get, but I’m always happy to come home. Traffic, traffic, and more traffic…
But I digress. It’s Friday, y’all, and Oscar is here for his weekly gig. As a matter of fact he turns eight this month! I can’t believe he’s been by my side for nearly eight years! I grabbed a couple of photos from his puppy days. Let’s wish the best German Shepherd ever a very happy birthday!
Finally, I've got a fun outfit for you today: I'm showing you how to style a graphic tee for Fall. Since France is on my radar screen, champagne comes to mind. So I’m serving a bubbly cocktail that’s easy to make this week. And a yummy Instant Pot chili perfect for the weekend. Come on in and sit awhile.
 Today, I'm showing you how to style a graphic tee for Fall
 I've modeled my shirt and styled it in two different ways
 Everything I'm modeling is shoppable via text- and image-based widgets
 I've also got a great recipe and cocktail for the weekend
1 ounce Campari
1 ounce sweet vermouth
Chilled prosecco to top (about 1 ounce)
Orange twist to garnish
1 lb ground turkey
1 cup chicken broth
1 large onion diced
3 large garlic cloves minced
1 bell pepper diced
1 1/2 cups corn canned or frozen
14 oz can red kidney beans rinsed and drained
14 oz can cannellini rinsed and drained
14 oz can black beans rinsed and drained
2 tbsp chili powder for mild or 3 tbsp for spicy
1 tsp cumin
1 tsp oregano dried
1/2 tsp paprika
3/4 tsp salt
28 oz can diced tomatoes low sodium
6 oz can tomato paste low sodium
Avocado oil
Green onion cilantro, cheese, plain yogurt, or sour cream
On Instant Pot, press Sauté and let appliance preheat until the display says Hot.
Swirl a bit of oil to coat, add ground turkey and cook for 4 minutes, breaking into small pieces with a spatula often. Meat doesn’t have to cook through.
If you see the bottom of the pot has stuck browned bits of meat, add 1/2 cup broth and deglaze the pot. If not – then it’s fine.
Press Cancel and add remaining 1/2 cup (if deglazed) or 1 cup broth.
Add onion, garlic, bell pepper, corn, beans, chili powder, cumin, oregano, paprika, salt, diced tomatoes, and tomato paste.
Close the lid, set pressure vent to Sealing, and press Pressure Cook on High or Manual for 15 minutes.
After release pressure using Quick Release by turning pressure valve to Venting position, which takes 2-3 minutes.
Open the lid, stir and serve hot with your favorite toppings.
