Ingredients
2 tbsp. Vegetable Oil
1lb. Ground Beef
Kosher salt and Black Pepper
1/2 Onion, sliced thinly
American Cheese Singles
Burger Buns
Dill Pickles
Marie’s Zesty Secret Sauce
Instructions
Lightly roll the pound of ground beef into 2 ounce meatballs.
Heat a 12-inch cast iron pan over medium-high heat with 2 tablespoons of vegetable oil.
When the oil is shimmery, salt and pepper your meatballs, then place 2 meatballs, seasoned side down on the griddle or pan.
Salt and pepper the topside of the meatballs on the griddle.
Put a small handful of onions on one of your meatballs.
Place your spatula flat on the other meatball and press down, flattening the meatball into a thin patty. A bacon press is a helpful tool to apply even weight, but you can use a can of beans too, just press down on the top of the can with the spatula between the can and the meat. Or if you feel like you have enough leverage, you can just use your own strength to flatten the meatball.
Now, smash the meatball with the onions on it. Let the patties cook for 1 minute.
Flip both patties. Then lay a slice of American cheese on the patty without the onions. Put your buns on. Let the patties cook for 30 seconds.
After 30 seconds, place your onion patty on top of the cheese patty and cook for 30 seconds more.
Pull your burger off the heat and set on a plate. Repeat with remaining meatballs – 2 per burger.
When the buns are nicely toasted pull them off the heat. Turn them cut side up and place each double smash burger on the bottom bun.
Top with pickles and a generous squeeze of Marie’s Zesty Secret Sauce.

The reference to “Cerulean blue” reminded me of Meryl Streep in The Devil Wears Prada (when she described how fashion colors trickle down). The burgers look smashing (I’ll try them!) and, of course, Oscar … what a sight for sore eyes. My Coco (now waiting at the rainbow bridge) would bark at me for ground beef if it was cooking on the stove. Smart beasts!

I agree, that blue looks wonderful on you. I too swear by a really good pair of pull on pants. I have many in different colors. My waist fluctuates depending on what I have eaten, so they are a must. But like you, they must be not only comfortable, but well made and in a cosmic style.

We love smash burgers. To make less of a guilty pleasure we often make them as sliders. But then you have to stop at ONE! Hard to do.
Love the colored pants this season. Going to be hard to make the transition from figure flattering black.
Saw a great demonstration on Stitch to Fit show of the difference darts and belts make to make fit more flattering. I’ve been avoiding belts since I misplaced my waistline. The demo really highlighted what a mistake that can be.

Love these pants. MIght have to invest in a pair but what color? Hmmm What blue is in the picture with you and Oscar? Is it the marine blue or gingham blue? Hard to tell from the picture? Love the sweater in that blue also. Hi Oscar and Kelly. Smash burgers sound good.
This is marine blue. It looks a bit lighter on the J. McLaughlin website but a bit darker in real life.

I like a beer too either Stella or Peroni, I think Peroni has the edge but only just.

Friday Greetings! Hey, Oscar! HEY, Ollie, see you, too! Great post. Timely, too. All due to, as Blog Sister Barbara commented today, “…since I misplaced my waistline…” LOL! Just replaced all zippered pants and added more pull on white cropped, capri, and first time, Bermuda shorts, to my Beth-influenced wardrobe. Must share all are Westbound brand, brand new, and bought at a Goodwill store. Felt like a thief walking out with such a great find! Got over the feeling fast, though. As part of 2023 self-care, going to work on locating that misplaced waistline!
