Happy Friday, gang! Another weekend is coming in hot and fast. Can you believe we have marched through March in no time flat?! The last weekend of March 2022 is upon us so let’s make it count. Of course, my best buddy Oscar is on hand, and we have a recipe or two up our sleeves. Mexico must have been heavy on my mind as I’m dishing up Taco Salad and a Jalapeño Margarita. Two of my favorites that are perfect for serving spring/summer. So come on in and stay awhile. TGIF!
If you follow my Instagram Stories, you know my house has been under a transformation the past few weeks. Yes, it was time for a facelift. I’m a big believer that our homes need to stay modern, fresh, and relevant, just like us! Last fall, I was dealt a few lemons (broken garage door and flooding in the basement), so I went ahead and made lemonade! The garage door was finally installed (it took five months), along with new black gutters that alleviated the basement’s water issue. Once those were installed, it was time to paint the house to bring the project full circle. For the past six years, I’ve debated painting the brick on my house. I had the same dilemma inside the house with both fireplaces that were stone and brick respectively. But I opted to paint the fireplaces and never looked back. They look terrific and give the house a modern vibe. So I decided to do the same with the outside brick. Man, oh man, does it look nice! The project isn’t quite complete as the front porch will be painted black, but we’re nearing the finish line! Here’s a peek at the progress, including the finishing touches with my downstairs studio.
Vibrant color in 2022
Vibrant colors are on trend this year. It’s never been easier to brighten your outfit and your mood. Fridays are always about casual ease, so it’s a no-brainer to incorporate denim, whether it’s a jean jacket, denim shirt or skirt, or a pair of humble blue jeans. Today I opted for light rinse jeans from Ann Taylor last seen here. This week I added a colorful abstract print tunic from Chico’s. I’m partnering with this iconic brand on Instagram on Saturday but thought this outfit was perfect for FWO. Many of you write asking how to hide a tummy. This tie front tunic is an easy way. Notice how it floats over my body with ample length in front. Don’t worry about the tie front adding bulk. It doesn’t! For the finishing touch, I added white sandals. Voila! The perfect weekend outfit.
Style tip: Incorporate a tie front with any button-up. Bring the tie front down over your tummy instead of letting it sit at your waist.
One of my go-to summer meals is a salad. Give this girl some mixed greens any day of the week. But I like to mix things up by adding protein, loads of veggies, or just about anything and everything. Today, a taco salad was right up my alley as it incorporates protein, veggies, and an avocado that’s loaded with good fat. Honestly, you can tweak a taco salad to your liking, even omitting the carbs. I chose to add a few tortilla chips for crunch, and I’m not sorry one bit. For the taco seasoning, I like to make my own instead of a store-bought concoction. The recipes are included in today’s post.
Brown ground beef. Drain oil if needed then return to pan. Add taco seasoning and water. Simmer until water evaporates and thickens to a saucy consistency.
Dressing
Mix sour cream, salsa, and taco seasoning. Add water 1 tablespoon at a time to desired consistency.
Salad
Chop iceberg lettuce and add to bowl. Layer tomatoes, avocado, olives, shredded cheese, taco meat, and tortilla chips. Sprinkle with chopped cilantro and add dressing.

A quick and easy dressing for taco salad and to save time is to use French or Catalina Dressing. It gives it a sweet taste which is yummy. I also put on the cheese and then add the beef on top of the cheese and it melts and it is absolutely delicious. Thank you for your great tips!
I love taco salads and your post makes me hungry for one, I made the shrimp and veggie pan dish you posted last Friday and was delicious. I substituted the artichoke hearts with green beans, added small cutup red potatoes with the onions and asparagus. Was so good! I do not drink, so the recipes for the drinks I never do.

And, I LOVE the brick painted white. We have some brick on our house that I desperately want to paint white, too. Your post has given me the “push” to go ahead and do it. Now, I just have to wait for the weather to cooperate in southern Missouri!

I have been following your garage door progress! I had an a incident with my garage door on November 1. I was 234 on the wait list. Last month I was told my new door was in. When contractor went to pick it up, it was not not at builder supply company. They located it in Memphis!!! I live in Georgia! Two weeks later it was shipped to Georgia, And Guess what??? It was damaged!!! So here we are, almost 5 months later, and NO door! 🤪🤪🤪
Hi Beth, your recipes look lovely. I have loved everything you’ve done with your home, unfortunately for me I preferred the brick work on your home unpainted, I thought it gave it character I’m so sorry but if you are happy with it that’s what matters.

I did the same thing – started with painting the fireplaces, then painted the house white and put black shutters and trim on it. A couple of years ago I painted the house a very dark olive gray/green and kept the black shutters and trim. I love the texture of painted brick homes.

I love the brick painted white, with the black accents! My family and I are vegetarian, so will do the taco salad with meat substitute. Yum!
