Welcome to Kelly’s Kitchen! This winter, more than any other I can recall lately, I have been craving steamy bowls of brothy soup. But most of the time, I don’t want to spend a lot of time or effort really. That’s when something like this super simple Wonton Soup really fits the bill. It’s easy to create a flavorful broth in a short period of time, and when you have store-bought frozen wontons –ย well, it could hardly be easier! Let’s jump right in!ย

The Easiest Wonton Soup
This will be a simple brothy soup with shiitake mushrooms, baby spinach and of course frozen wontons. I have the cilantro chicken wontons from Trader Joe’s, but any small frozen wontons or dumplings you can find will work out.ย
I am starting off with unsalted chicken stock. I will use 6 cups of stock. To the stock, we will add flavor with a carrot, scallions, ginger, garlic and soy sauce. This is a really simple way to create a flavorful Asian-style broth quickly.ย
Bring the broth ingredients up to a boil, then reduce the heat to simmer, covered for about 15 minutes. Meanwhile, heat a little sesame oil in a small nonstick skillet over medium heat and sautรฉ the sliced shiitake mushrooms until they begin to take on some browning. Add about ยฝ teaspoon of fresh grated ginger to the mushrooms and add a light drizzle of soy sauce. Stir well and cut the heat, set aside.ย
After the broth has simmered covered for 15-20 minutes, strain the broth through a fine mesh sieve and discard the solids, return the strained broth to the pot. Increase the heat to bring the broth back up to a boil. Taste the broth and add more soy sauce as needed, to taste. Stir in a tablespoon of rice vinegar, then add the sautรฉd mushrooms and about 3 ounces of fresh baby spinach to the pot.ย
When the broth is boiling again, reduce the heat to a high simmer and add the frozen wontons to the broth. Cover and cook the wontons for about 3-5 minutes. Test a wonton for doneness, and if they’re done. Cut the heat and it’s time to serve!ย
Ladle the Wonton Soup into bowls and top with sliced scallions, cilantro and chili crisp. I had a leftover 8-minute egg in the fridge so I added it to my bowl.
I had never tried the chicken cilantro wontons before and they are really very good, so if you have a TJ’s near you, definitely pick up a bag while you’re there.
