Welcome to Kelly’s Kitchen! Today we are making a very simple, very satisfying weeknight dinner: Tortellini with Sausage and Veggies. This is a great recipe because it’s quick and you sub in any veggies you have on hand. You can make it colorful and healthy by using a variety of veggies – let’s jump right in!
Today we are making Tortellini with Sausage and Veggies

I have one pound of spicy Italian sausage, half an onion, some garlic, one orange bell pepper, and 1 cup each corn and peas, and of course one 10-ounce bag of cheese lovers fresh tortellini. Get a pot of about 2 quarts of water set to boil.
Over medium heat, brown the sausage, breaking it up as it cooks. When it’s mostly cooked through add the diced onion and sauté until softened. Add the rest of the veggies and sauté until warmed through. Reduce heat to low.
Then cook the pasta according to package directions.
Just before the pasta is finished, scoop about ¼ cup of the pasta water out of the post and stir it into the sausage and veggie mixture. Stir in about ¼ cup of grated parmesan.
Use a spider skimmer to scoop the tortellini out of the pot and gently stir the tortellini into the sausage and veggies. Cut the heat and we are ready to serve!
Plate servings in wide shallow pasta bowls and top with more grated parmesan cheese and fresh basil.
