- 8 oz. Italian sausage links
- 2 cups whole button or cremini mushrooms
- 2 cups cherry tomatoes
- 1 medium onion cut into 1-inch pieces
- 1 large green pepper cut into 1-inch pieces
- 30 slices pepperoni
- 1 tube refrigerated pizza crust
- 1 ½ cups shredded mozzarella cheese
- 1 ¼ cups pizza sauce warmed
Preheat the oven to 400º F. In a large skillet, cook the sausage over medium heat until no longer pink. Drain and let cool. When cool enough to handle, cut the sausage into about 20 pieces. Alternately skewer the sausage, vegetables, and pepperoni on skewers.
Unroll the pizza dough on a lightly floured surface. Cut width-wise into 1-inch wide strips. Starting at the pointed end of the skewer, pierce one end of the dough strip and spiral-wrap the dough strip around the length of the prepared skewer, allowing the veggies and meat to peek through between the spirals. Repeat with the remaining dough and skewers.
Arrange the kabobs on an oiled baking sheet. Bake until vegetables are tender and the pizza crust is golden. 10-12 minutes. Immediately sprinkle with cheese and place back in the oven until the cheese is melted about 2-3 minutes. Serve with pizza sauce.
